Different Dishes Of Chinese Food On Restaurant Menu Including Ducks Tongues
Ducks tongues as a separate dish of Chinese food served at a restaurant !? There is always a first time for everything and so it was when eating the ducks tongues, that looked very unfamiliar when the waiter brought the dish to the table at the Chinese food restaurant chosen for an evening meal. Two other items on the restaurant's Chinese Food menu were 'Roasted Mule' and 'Lotus Root Stuffed With Sticky Rice'. 'Dog Meat' was not included on the menu of this Chinese Food Restaurant, but a few blocks away, down one of the side streets, a small family owned restaurant had such a dish on their menu. Strangely enough, the meat itself just tasted like pork, when it was included in one meal at a different restaurant, but the thought of eating the flesh of a family pet animal, was somewhat off-putting.
Visiting the family home of a friend one year, two young puppy dogs were very playful and affectionate to all who came in contact with them. When making a return visit the following year, there was only one dog to be seen. When asked about the missing dog, my friend replied that they had eaten it. When the response was made, 'You cant eat a pet dog!', back came the reply, 'You eat pork dont you!'. Yes we do, and young lambs, and young cows, and chickens and ducks and rabbits, listed on many Chinese food restaurant menus, but many westerners have an aversion to eating dog meat in whatever way it is cooked.
Cooked Duck's Tongues On A Plate In A Chinese Food Restaurant.
When the waiter brought the dish of strange looking objects to the table of the Chinese Food Restaurant and placed them in the center of the table, my friend told me they were duck's tongues! The method of cooking them is unknown but they were very tasty and a bit crispy. How many people know that ducks have tongues large enough to be eaten by human beings. There does not seem much of a duck that is wasted; both feathers and feet are used in one form or another. Chicken feathers are used as dusters, chicken feet are cooked and eaten!
'Three Times Cooked Pork' and 'Winter Melon Soup' were two other items chosen from the restaurant menu for our meal. The 'Three Times Cooked Pork' was an old favourite, but the 'Winter Melon Soup' was something new. The cooked pork was served at the homes of friends, whenever there was a special occasion to celebrate, such as a new year, or a wedding in the family. It is certainly not a fast food dish, as the pork goes through the three processes of boiling, frying, and steaming, hence the name, 'Three Times Cooked Pork', well that is the english translation given. Crispy Belly Pork is one dish using the same cut of meat, but whereas the roasted belly pork has a crispy skin, the belly pork when cooked three times will almost melt when placed in the mouth. Perhaps that is one of the reasons why Chinese food is so popular!

Often, Chinese food found outside China can range from the authentic, or food that has been adapted for local tastes, to something that is newly created. For example, chop suey does not exist in Chinese restaurants in China.
